I exclusively track mine. It’s been reliable and lots of fun. I’m also not the typical car owner who lets things go until they are physically broken, everything is done either early or on time maintenance wise, even if it isn’t broken it gets replaced at its service interval weather that’s time...

Depends on your wants. If you do catless down pipe add 3-400, the tune is around 800 if i remember correctly.
I have a ‘12 that’s stage 2. There’s only really 1 good tuner in the US. The other one is in Canada and the US guy is a rep for them.

Get them to agree to “not to exceed price” on the bearings regardless of time. The Subarus are notorious for completely seized inner race when doing the bearings.
What they have quoted you for the whole thing is fair, and they are probably want to get it done before it’s a whole ordeal...
I run a catless downpipe, and catless factory exhaust. Everything else is intact.
If you get a catless downpipe it’ll throw a check engine light so you have to get it tuned.
The 07-11 models are the problematic ones. They have the N14 engine that’s prone to HPF failures, timing chain grenading, and cylinder scoring/meltdown.
2012+ S(not JCW) has n18 which sorted all of that out. The n14 is easier to get tuned than the n18 which sucks.
If you are not patient or mechanically inclined, don’t bother with it.
It’s hilariously fun, but annoying to work on.
I have one specifically for track use, so I see accelerated(by choice) maintenance cycles and what will and won’t give out.
Just like with the .45ACP, some people say something is the best because of an experience that is formed so many years ago it’s no longer relevant today.
Not one brand or model is “the best”, you just have to choose what problems you are willing to live with and what compromise you want to make.

My 21’ Ram 1500 (4x4, Crew Cab, Limited Trim) gets avg 30-34mpg on the highway depending on the trip. I disagree with your fuel mileage statement.
33gal tank and 3.93 gears I get about 800 miles to the tank with mixed Hwy and city driving and over 1000 when it’s all interstate..
I’m sticking to my guns, I’m fossil fuel until the electrics charge can go from 1-2% to 100% in the time it takes for me to fill my fuel tank now.
I’ll even settle for 3x the amount of time as it takes now to fuel up my fossil fuel vehicles.
