Why I like to buy used Case pocketknives. A little honest wear is no big deal to me. Sodbuster Jr. is the bomb, although there are knock offs of it. I guess times are hard when a "name" knife maker has to knock off a $20 knife.
All of my really good kitchen knives are carbon steel, the oldest ones are worn down to a strip.
They will stain, and I just don't worry about them. I always wipe them off good with a dry rag, and put them up on a hanger.
