I was thinking dry aging as well. I saw a youtube video a while back where a guy sat a whole ribeye on coarse salt uncovered in the fridge for several weeks. Looked great.
Bought a manual crank one at Academy the other day to grind up less than 10# of venison and it did the job but sucked. For $300 you should be able to find an awesome grinder.
I'm going to swing by Academy on my way home from work. All of those stores carry them online but it is hard to tell without actually stepping food in the store if they carry them there or not.
If anyone can tell me anywhere local that carries the hand crank grinders in stock please advise as well. Many retailers sell it online but I am having trouble finding one locally.
