Concord wine recipes?

Just picked 5 x 5gallon buckets of concords on Saturday. I have cleaned them (picked through the clusters) and they are resting in the basement. They weren't quite ripe, but I will have to process them today or tomorrow.

In the past I have made wine using a recipe that calls for 5 pounds of grapes and several cups of water, but I have never been happy with the taste. It's too watery. So this time I think I'm just going to crush the grapes and go with whatever liquid I get (not adding water). Any tips? Who makes concord wine and tell me your secrets. Don't leave anything out. I am still learning and want to make a better batch. This will be my 3rd try.
 
what type yeast do you use? how much sugar if any ? how much do you crush them? do you just use the pulp or strain and use only the juice? lots of different ways to make wine. i make muscadine wine and used to make muscadine brandy years ago. i use a Vitner's Harvest Premium Wine Yeast for muscadine
