Eating Good In DiXie
Cooking venison roast today in the crock pot, injected with Tony Catchers Cajun Butter, braised in oil, wine, & butter, wrapped in bacon, into crock pot with secret sauce and spices,
now I'm going hunting
may enter the Shovelhead FLH in the Southern Devil Bike Show if I don't have to mess with a deer
all proceeds from show go to benefit local Veterans
around here if you don't fill your freezer before Thanksgiving all the deer go into hiding never to be seen in daylight again
I'm a man on a mission

I bet I've cooked a hundred deer roasts at deer camp. I have a very large cast iron dutch oven. I usually start about 2:30-3:00 in the afternoon. I would take a boned out deer hind quarter and salt and pepper. While the dutch oven heats up on a burner I get a pot of water heating and put in beef bouillon and onions. I brown the roast on all sides and then dump in the broth onion mixture. I cover and turn it as low as I can get it. We all go to the woods and hunt and come back at dark. I quarter a bunch of potatoes and add them then throw in a bag of baby carrots. Let that cook for about another 45 minutes. Take the entire pot and set it on the table. Everyone digs in and grabs what they want. The deer meat just falls apart. It's a hearty and delicious meal. Don't forget some beard or rolls for sopping up the broth. And the leftover makes killer sandwiches the next day. And by the way, I've killed a ton of deer late season. Just have to get out there when others aren't.
