I spent some time looking up a few weeks ago, watching every jet that passed. You have Jets that appear to be about the same size at the same altitude, but some leave trails and others don't.
over the Atlanta area, with all the commercial airline traffic, perhaps a take-off or landing every few minutes, that is to be expected. In my area, there are 4 scheduled airline flights in a day. You are doing the right thing by looking up in the sky

I watched 2 large jets flying low over my house one night. One jet was right behind just off the left wing of the one in front. I had no idea they flew the big planes like that. They weren't loud at all. I couldn't believe jets that big could be so quiet. Yes, I was haf when it happened
