stuffed bell peppers

stuffed bell peppers for next weeks lunch a couple of days,( then homemade spaghetti the other days.)
6/7 large bell peppers
1 can rotell diced tomatoes with green chili's
i can seasoned roasted garlic and onion tomato sauce
2 Lb's ground beef ( i use one lb ground beef and one lb Cajun sausage )
1 package knorr dirty rice mix
1 large onion
cajun seasoning , Worcestershire sauce

in a large cook pot i brown the ground beef with cajun seasoning , Worcestershire sauce , then drain on paper towel, cut the tops off the peppers and dice.clean out centers of the the peppers . dice onion. add to grease in the pot and simmer lightly . remove from pot set aside ,and dump grease. add two cups water, rice mix, cook until 3/4 done then add meat , tomatoes,sauce, onions diced peppers and seasoning . cook untill rice is done.
add mixture to peppers, cook on 350 until peppers are just about done, add cheese and sliced jalapeno peppers on top and let cook until cheese is melted down

Parboil the cleaned peppers for 2-3 minutes then drop in ice weater to stop the cooking, then stuff adds a great flavor and texture. Recipe sounds awesome.
