This sounds like timing issue to me. Try putting the vacuum advance back to stock. Are you using the stock distributor?

I'd ride it and let it smoke. Especially if it's only at idle. As for tires, I have no idea. Google the size and see what you find. Hard to believe only one brand makes those tires but Triumph did the same a few years ago.

Sounds like its overfueling at idle. The slow/intermediate jet may be a tad too big. Most exhaust mods lean an engine out so it has probably been jetted at some point. If it runs ok and only smokes when you goose it at idle, I'd leave it alone. You'll probably see some popping on decel but...

Can't speak for boat motors but I have plenty of experience with V-Twin bike motors. If you change to that big of a carb, you can get 30-40% more HP (depending on cam and compression) but you WILL load up with fuel in the idle circuit. It can probably be tuned to run like a raped ape on top end...
