I like using deer cubed steaks in my smoker. Slice in strips and marinate. It wants to fall apart placing it on the grates if you are not careful. I like it better than just strips of meat. Much more tender and easy to chew. I have never tried ground using a gun.
I've got a Bradley. I'm too lazy to babysit one all day. Was looking for that program it and leave it alone type. Each wood puck burns 20 minutes and then another one rolls in on the conveyor. Timer for the smoke and timer for the heat and temp. Idiot proof.

I have marinated mine before and then sliced in strips to make jerky in the smoker several times. Best thing I have found for making jerky but it's one of those you have to keep an eye on and flip, rotate the trays, etc. Being cubed keeps it more tender and not tough and stringy.

Actually I have just thrown them on the grill with salt and pepper before when I was desperate, and they came out well, but that's not a recipe... and just too healthy for me :hungry:
