so the other morning my daughter was on her way back from taking my son in law to work... he is legally blind and cant drive.
on the way home around 5 am she met George. George introduced himself by gathering his friends and running in front of her SUV. his friends made it, George did not...
so after the police, a check over and some settling of nerves, we found George chilling out in the middle of the road. we felt George wanted to ride in the back of the truck, and see our stainless steel table. as George was dispatched with a 2000+lb vehicle we salvaged what we could. a few small roasts and two mostly intact backstraps..
so here it is, Backstrap ALA George
Brine:
Soak in brine for at least 24 hrs, up to 36 to 48 hrs.
Brine receipt:
Half a cup of sugar
Quarter cup of salt
3 Tbls garlic powder
Boil ingrediencies in 4 cups of water until completely dissolved.
Add ice to completely chill the brine.
Place meat into large pot and add brine.
Cover all meat with water.
Mix around.
Cover and place into the fridge. (If meat wants to float, put a bowl or plate to keep meat under water.)
Now to preparation:
Rinse back strap and put into foil lined pan.
Salt and pepper both sides of back strap.
Place back strap fat side up.
Cut 2 onions in strips and cover.
1 bag of baby carrots.
Cut up 2 to 3 apples and sprinkle over the top.
Cut 2 sticks of butter, long ways and place on top.
Sprinkle the top with Lawry's season salt.
Cover with Foil.
Place in oven at 350 deg.
Cook until pork reaches min. 145 deg and carrots are soft.
