Found an older Sig 226 9mm made in East Germany. Not the prettiest but what's the collectability/shootability/price to pay for these early models? I know Google is my friend but it's a lot of drilling down for a ball park question e.g. forum threads from the early millennia as the first listed return searches.

Made in west Germany , I don't think they made them in on the east side, they are a Swiss company

Collectable? Well for someone who collects military sidearms this would be one to strongly consider. Only two pistols passed the military/Army joint pistol trials in the 1980's. The other was cheaper.

Sig's tend to hold value and doubtful you will lose money, unless you overpaid. Great guns that stop being made, become scarce (demand/supply) will increase in value. Like when HK decided the U.S. market was not big enough for the 9mm Expert stopped (nearly doubled the price) but since has resumed production, like classics such as early pinned/recessed Smith's, or AK's, etc.
