Copycat penrose hot sausages (great for pickled eggs too!)

Just mixed up the brine and put up a quart of these to try. I’ll let y’all know in about a week if they’re any good!

I used Oscar Meyer “smokies” and just cut them in half.

I had a friend who would make a brine very close to this. He would jar up sliced kielbasa and sliced banana peppers and add the hot brine. They sure was some good eating.

I remember as a teen going to a local mom & pop bar/ grill/ clam bar with my Dad and his brother for lunch.
They'd have a few of these Penrose sausages as an appetizer.

My Gran dad owned I one bay gas station, when I went to lunch with him it was a treat..Right across the street was a diner with spinning stools at the counter..They always had pickles on the counter and boiled eggs pickled in a jar for no charge..He always ordered the daily special, all the spaghetti and meat balls you could eat for 25 cents..
