Favorite venison dish/recipe.

So I'm sure this has been brought up before and i apologize if this isn’t the correct forum for this but what is your favorite venison dish. Im sitting here waiting for my Mississippi neck roast to finish and just got thinking of my favorite way to cook venison.
I think my all time favorite is simple. I butterfly the loin chops(like a taco) and stuff them with cream cheese and jalapeño and warp it in bacon and throw it on the grill till the bacon is done.

Im always looking for new ways so please share what you like…
 
The list is long and heavy, but, I really do love a venison and wild hog meatloaf all smoked up silly in the rec tec. Some mashed taters, peas and a bit of gravy. Damn son. I have far more complicated, out there dishes I like almost as much, but that just makes me happy.

If you parcook your bacon, your stuffed chops will be done before the venison is overcooked. This assumes you don't prefer burnt bacon and liver. Same goes for dove breast. People often think these things are gamey or liver-y because they get overcooked.

We use deer for almost everything except hamburgers and prefer it to beef. There are exceptions, of course, but done right there are no deer-specific recipes. Don't overcook. If you find it dry, use olive oil for fat. I eat beef and chicken because I have to. I eat deer and squirrel because I want to.
