First Attempt on my own smoker

One of our favorites is pork tenderloins with just salt and pepper. After they are finished smoking, slice thin across the grain and put a little melted butter on top while hot. Little grandsons call them meat cookies. Always turn out great and there is no waste when serving.
Try them wrapped in bacon. I don't think I'll make them any other way again.

Pork belly burnt ends are the only thing you ever need to cook. It’s easy and there’s no better bite of food.
On my inaugural run I did a pork loin, it came out fair. I headed to Publix for some pork belly as the smoker was still hot and they didn't have any. I did end up with a ham that came out 10/10, injected with pineapple juice and smoked in a foil pan with pieces of pineapple, using mesquite wood. Pork belly is awesome, I'm going to try this week to find one.
 
I had to google that. For the rest of you, it's plate ribs. Never heard of them before. Good luck to you on finding them!
They changed names on me, atleast I think. We called them country style beef ribs. Now they call them Dino Bones. I wish there was a decent butcher shop around me. One is not high quality, the other is 3x what it should cost.

You can get the big meaty beef ribs at Sam's. You have to ask for them. They are on their website but not in the meat case. There's a 2 pack so it's a lot of rib. They break open the 2 packs and slice into flanken style ribs for Korean Galbi. You can cut them into country style beef ribs or leave the plate whole. It's fatty beefy deliciousness.
