Just to be pedantic, although I know it's a big deal with health nuts ( and I mean "nuts" in the worst possible way), there is no such thing as "uncured bacon".

"Uncured" bacon is pork belly, which is itself a very trendy item right now at upscale restaurants.

There is for sale bacon and wieners advertised as "no nitrates" which is borderline fraudulent, because they all are preserved with celery juice, which is higher in nitrate percentage wise than the curing salt used in curing meat.

Here are the ingredients in the bacon jam:

'COOKED BACON (PORK, BACON CURE [WATER, SALT, SODIUM PHOSPHATE, SUGAR, HYDROLYZED SOY PROTEIN, SODIUM ERYTHORBATE, FLAVORINGS, SODIUM NITRATE]), DARK BROWN SUGAR, ONIONS, APPLE CIDER VINEGAR, EVAPORATED CANE SYRUP, PECTIN, GARLIC POWDER, CITRIC ACID (ACIDITY REGULATOR).'
