I did trim some fat off
in places it was 1-1/2" thick
I took off 3 handfuls
but left plenty on, I did not cut down to the meat
it's waiting in the freezer for a warm day

Coated in coffee grinds...never remove fat...only thing keeping it moist

You'll just have to try it...sounds terrible...I know...but on brisket and short ribs...its amazing
