I don't know why I waited so long but I've finally bought a jerky cannon and a dehydrator. Got my first ever batch in right now. Bought a nesco variety seasoning pack. Doing cracked pepper and garlic first. Any tips you want to throw my way feel free. I plan on doing a whole deer in jerky this year plus a bunch of beef. It's all experimenting until I dial it in.

I slice any of the meat thin.. drop it a bowl with wish yer sauce and some spicy splice for a couple of days.. I like mine a little warm

If you are feeling lazy get cut fajita meat from the butcher. The cut is easier to chew -not so stringy.

I have a meat slicer. I just have to figure out the grain and which direction to slice.

I used to do the ground using the gun
but
just started cutting chunks off hams & shoulders
I don't soak
sprinkle my favorite spice rub
lay between 2 sheet of Press'n Seal, these 2 sheets will last for 25 pieces
beat with flat mallet
cut to size and in the dehydrator they go
