I have been making beef jerky with a London Broil cut of meat. We have tried a couple different recipes with the marinade. We haven't liked them. I want a little spice but not hot. Any recipes y'all would share would be awesome.

I usually use the whole hind quarters when I make it, but it should work with beef. Every time I make it, I take a large ziploc bag into work and it's usually gone by lunch.
I don't know exact measurements, but these are close.

1/2 cup brown sugar
1/4 cup soy sauce
1/8 cup apple cider vinegar
1 teaspoon garlic powder
1 teaspoon ground cayenne pepper
1/2 can or bottle beer (usually a good dark beer)
1/2 cup chicken stock (I make my own from left over smoked chicken bones)
Jalapeño or habanero pepper to taste pureed
A little pink salt to preserve it

Heat on low until everything is melted and blended then let cool. I freeze my chicken stock in ice cube trays so I put them in at this point to help cool.
Place meat in ziploc bag for 24 hrs.

I smoke mine at about 150 deg. For 4-8 hours, depending on the weather.

Just started dehydrating my first batch tonight. Using thin cut top round. Kind of winging it on the recipe. Will post it if it doesn't taste like crap.
