Need some rifle caliber recommendations

600 yds is a long shot for hunting with either caliber. Consider a .30-06 or a .300 WM if you really want to try to stretch your shots.

For 1-300ish, a .308 or .270 would get the job done just fine.

7mm Rem Mag, but I'll take .260 over 7mm-08

I like the 7MM size bullet and have been using the 7MM-08 for years with great success. When we lost the land that gave opportunity for long shots 300-600 I switched from the 280REM to the 7MM-08.

The 280 is a 30-06 necked down to 7MM
The 7MM-08 is a 308 necked down to 7MM

I agree. .308 man myself, but have a Rem 788 in 7mm-08 that is a joy to shoot! You'll love the caliber and the rifle you have chosen.
