So I have about $700 for a new project.

Not sure what to build. I already have AKs and ARs. I could do with an extra AK, and without another AR

Any other ideas, would like to hear it.

I run 5.56, 7.62x39, 9mm, 40SW, and 7.62x54r.
 
You should do a Ruger 10/22 Takedown survival rifle. They come in a back pack and Hogue teamed with Tactical solutions to make a Hogue stock/TS bull barrel kit for it. Hair over budget but one sweet rifle and threaded for a can. I'm sure there are sales and prices may vary this was a quick search.
