Probably 95% of my cooking is done on the Weber charcoal grill or the Traeger Smoker. With the weather being a little warm today, I had a craving for something cold rather than a hot meal. I diced a chicken breast, celery, Vidalia onion, and sliced some black seedless grapes to make me some chicken salad. I mixed it all up with the normal mayonnaise; but I added a few globs of Ken's Sweet Vidalia Onion Dressing and a dash of lemon juice to kick start the flavor somewhat. I served it on a bed of bib lettuce with sliced tomato and cottage cheese as a side. I topped the cottage cheese with fresh blueberries.
I'm not gonna lie and claim it was as good as bacon or spareribs; but it was a pretty tasty change for a hot day.
