Squirrel with biscuits and red eye gravy. I'll get it from my great aunt and post it ASAP.
No recipe but had plenty squirrel dumplings when I was younger from my grandmother. Just as good as any chicken dumpling recipe. mmm mmm tree rat stew!
We never have....Sometimes just clean em up, slice em, toss some salt, pepper and garlic on em and pan fry them like a breakfast pork chop.
We always do, it's how my grandma cooked them. It actually makes the meat SUPER tender! Usually, we parboil or stew them first. Drain them, and fry them up with a mixture of cornmeal, crushed cayenne pepper, flour, salt, pepper, and whatever else you prefer in your mix.
Easiest we do is slice meat off and cook it in with yellow rice. Fox and older greys eat better if parboiled or pressure cooked with beer.
