What to buy my Lady?

Beretta CX4 is a great option too. Especially if her issue with rifles is recoil sensitivity. I've had both the CX4 and the sub2k. I liked them both but the CX4 is easier to shoot and better made. You can catch them for 600ish every so often; just dont pay what some of these jokers have them listed for lately. IMHO anyway...

Agreed, my wife loves her CX4 and shoots it better than I do.

She doesn't like Recoil, but she's shot everything before. I think if I did go with an AR it would just be hers to get used to. Anybody else have a hard time trying to teach how to stand and look down the sights she looks so awkward leaning away from the gun?

A lever-action Rossi 92 in .38/.357 is a lot of fun to shoot with .38's. Recoil is almost nil.

Something different to consider.

Well She is Used to shooting other calibers but I do think she would enjoy a .22 a lot and then maybe later on move up. When it comes down to it I really just want her to have a Handgun for Self Defense and her to come be my shooting partner.

Just buy her one of these
