I cook the bird, super simple. 14lb turkey, take out all the "extras." I put it on a deep cookie sheet and sprinkle with Larry the Cable Guy's beer can chicken rub. I peel a large onion and set it at the opening of the cavity, I've heard this will help "steam" the inside while it cooks. I preheat the oven to 375, put the bird in and turn the oven down to 325. Takes roughly 3 hours...some been quicker, some took longer. Good crispy skin...just plain good all the way around.
I like turkey noodle soup with the leftovers. Fill a large pot with water, pour in all the pan drippings. I added 3 chicken bouillon cubes. Last time I used the gelatin type bouillon...use whatever you got. Throw in the bones and boil for awhile...I didn't check time, it was probably 30 minutes. Take out all the bones and I just skimmed the broth. You could use cheesecloth but I'm lazy and all I was worried about was removing any objectionables.
I took a whole box of spaghetti noodles and broke them in half and cooked them in the broth.
I rough chopped some turkey and threw it in. I chopped the onion that was in the bird and sautéed it. Into the pot along with a can of peas, liquid and all. Let it cook down and give it a good stir. It tends to thicken up a good bit after turning off the heat. That's when it's "right." Man, love this stuff!
Some options I do but my wife doesn't like lol: when sautéing the onions, sauté some celery with it. Add in a can of cream of mushroom soup into the stock. Or make it the original way and add a can of cream of celery. Or play around with it and do what ya like!
