Cut it all into steaks slightly over 1" thick. Cook in oven at 200° till internal temp reaches 90°. Quick sear on both sides on cast iron pan. This is the way.
I did that last year and wasnt really impressed. The next one I just cut it all into steaks. Much more enjoyable that way.Bought a 15 pound bone out ribeye today on a whim.
