What's going on the smoker/grill today?

It's my understanding that many restaurants use the cut. I think that they are actually a cheaper cut than your standard pork ribs....I believe that's what Houston's uses....also Stoney River....to me, they are good....they do cook a little quicker as they are a bit smaller.....they eat good!!!
 
If you've never had one of these you should try to find one. Costco has them now until about the end of the year then they disappear. Aldi also carries this as a seasonal item. I cooked one last night on the Recteq. Seasoned with my favorite rub and on the grill at 375 until temp hit 140. Rested for about 10 minutes and carved into chops. These are very moist and tender. I stock my freezer while they have them.
