    I think they've got me scared of under cooking my jerky. Last time I used the dehydrator I over did it and my jerky was to dry and chewy. I've got some on now for 3hrs and the thinner pieces seem dry. The thicker pieces still have some moist spots. 3hrs seem like enough on a thin sliced piece...

    Very true. You just need to keep the pressure off your legs. Most either have a relief strap and quick release buckles on the leg straps.
