there is a "range" in the grading, it can't always be the same
If you want the marbling, you need to buy prime.....AND sometimes that's not always as "marbled" as one would like
then, there's always Wagyu....even that's in different grades....complicated
I am just not a fan of Costco meat....it just doesn't(to me) taste as good as others....it's a foiba, I'm sure, however I do not like their "BALDE TENDERIZED" steaks....none of that for me...

to find the REAL rare/medium rare/medium cooking temps, you have to go back the old cook books....today, they have upped the cooking temps in most published recipes
