It all depends on what you need at the time. A nice small crkt or kershaw for light duty. A larger Benchmade or ZT for self defense. I always carry my ZT0350 since it's a great worker and doubles as a self defense blade.
My fastest folding knife is my ZT0300BW I picked up here on the ODT. A little big, but quick to open and ready to work.
My fastest non-folding is my Eric Kramer. (appendix carry)

Cutting your hands, and you foot once, should be a good indication that you really don't need to put a razor sharp blade anywhere near your throat! I use an Ikon safety razor...works awesome and saves me a ton of cash on blades. I use the soap/cream, Badger brush...
I like the horn material. I looked at a lot of the tables selling steel and handle material. Amazing what's out there to choose from. You'll have to show us what you end up using the horn for.
