We took the fat from our last duck cooked and made caramels. Gave the out to family and friends at Christmas.
  2. Rib Roast

Bought a small one just after thanksgiving and encased it in butter. Sat in the fridge until Christmas morning when I tossed it on the smoker for 4-1/2 hr, then seared in the oven at 500 for 6-8min. Probably my 4th or 5th Christmas doing it the same way.

  5. Anyone own a freeze dryer?

I have bought the bulk Mountain House freeze dried beef, chicken, and eggs w/bacon then added my own ingredients to compliment. I will dry onions, beans, and peppers in the oven then add to beef with spices for a decent chili. I think my wife was looking at one that was a little over $2k that...
  6. Anyone own a freeze dryer?

Been contemplating getting one myself. I do a good bit of hiking and at $10 or so a meal it can get expensive, especially when I take the family of 4.
  7. Chicken Cacciatore

    It’s good with Rabbit too!
  8. Brats on the stove top

Here lately I’ve been Browning a few sausages in the skillet then frying up 3-4 strips of bacon and setting them aside, slicing 1/2 a head of cabbage in to about 1-2” x 1/2” strips and adding it to the bacon grease, cooking until tender. Chop the bacon up and add it back to the cabbage, mix up...

  14. Rib Roast

So, I bought a nice 10-1/2 lb angus beef rib roast, coated it in butter, salt, and black pepper. Going to let us sit in the fridge until Thanksgiving, then plan to smoke it over Cherry for 4-5hrs and then sear in the oven. Back up plan is a beer brined turkey, rotisserie cooked in the Weber...

  17. New Smoker

If you are in the market, these are made right here in the USA. My wife called to get a tracking number and the owner/president of the company answered and told her he would text it when he got back to the office. Sure enough, a few hours later he sent the number via text. Good folks out in...
  18. New Smoker

My wife got me a Smokin-it Model 1 for my birthday and I am thrilled with the results. I put a butt on this morning at 6:30A and pulled it off when I got home. After a 12-hr smoke over hickory chunks it was dang tasty. Cheers!
