I looked up the older models of the Kimber Classic Custom Target and one has the adjustable sights and one had a rampted style sight on the back. Either one of these shouldn't an any way effect your thumb. You need to find a different way to rack the slide. Those sights are not uncommon and I even have a set on my gun so either put the gun into battery from the front serrations or get a different purchase on the rear serrations.
As far as I see from the older photos. A pic of yours would help a lot just so I can make sure we are on the same page.

If it has those large, squared off, Bomar-style target sights then it is very possible to gouge your hand when racking and working the gun fast. I use a palm-over method of grasping the slide, as it is more positive for me than "slingshotting", and I've had sights on some handguns dig into hand. It's common.

BLIP BLIP if I had a pic of your rear sight setup I could recommend some options.

Do what I did and sell your 1911s and get a HK. ;)

Thank you sir I will take a picture. I'm pretty new to 1911's right now it's a love-hate relationship but I have to say I love the design and the accuracy
