Armadillo Eggs in the Air Fryer

I make something similar. But in the smoker.
Cream cheese, bacon bits, any barbecue dry rub and mozzarella. Mix it together.
Half and core the jalapeños.
Spoon in the mixture.
Wrap with thinly sliced bacon.
Shake some of that dry rub on top.
In the smoker for a few hours.

Here’s the kicker. When they come out, brush some pepper jelly on the top and put them under the broiler for 5 minutes.

Been making variations of it for years. This combo has been the winner and a hit with everyone. The savory mixed with the sweet heat from the caramelized pepper jelly on the bacon is

Y’all some dumbasses. These are all poppers. (Delicious but not armadillo eggs.) Armadillo egg is a jack cheese stuffed jalapeño pepper wrapped in a pound of sausage covered in braided bacon. You’ll smack the taste out yo Mamas mouth.
