Keep it simple, taco meat and fried eggs

Smoked chicken enchiladas. I cooked some chicken thighs on the Recteq. Removed the meat and mixed it with some Kinders Hatch Chili seasoning and some street taco seasoning. Added some 505 green chili, sour cream, and cream cheese. Rolled it up in flour tortillas. My enchilada sauce is pureed Herdez Salas Verde. I cooked it for an hour on the Recteq to add a bit of smoke flavor.
