Fried shrimp

These are good! Slightly different recipe than most, makes a thick, crunchy breading...

I used 2lbs of large shrimp, I butterflied them and left the tails on.

Take 4 cups of water and 1.5 cups of cornstarch and whisk it together...the cornstarch can be like mixing mortar with a whisk, so I advise mixing the cornstarch into the water a little at a time. Then whisk in 2 eggs. The wash will be foamy.

Dip the shrimp into the egg wash and then into regular breadcrumbs.

Then whisk the egg wash again and dip the breaded shrimp back in, then this time I breaded them with Panko.

I deep fried them in 360° oil for about 5 minutes, to get the breading crispy and to get the golden brown color. The shrimp didn't get rubbery or hard at all, they were great!

When you do a large batch, the breadcrumbs in the bowl can start to get wet and clump up. So you may have to dump the breadcrumbs out and pour in some fresh breadcrumbs.

Also, the recipe isn't hard but when you do a large batch and double bread them, it starts to feel a little labor-intensive. I think next time I may try a single breading and mix some cornmeal with some plain breadcrumbs. I haven't tried this yet but I think it should be good!
