House Water Line Recommendation..

I’m not a plumber, but we fix Utilities. It used to be copper was the best. But then I believe it had too many Pinhole problems.
I figured PVC, but I think the answer is actually Pex. Pex is Flexible and has less issues underground. Only the fittings may occasionally have an issue, of which there should be none along your 250 foot route.
 
No offense, but I wouldn't install PEX in an outhouse. It leaches carcinogenetics, will breakdown from chlorine, and joints easily fail. Underground, it's a blowout waiting to happen if there is a connection. Schedule 40 PVC with purple primed connections is the best option for a 250' run, IMHO.
