No offense, but I wouldn't install PEX in an outhouse. It leaches carcinogenetics, will breakdown from chlorine, and joints easily fail. Underground, it's a blowout waiting to happen if there is a connection. Schedule 40 PVC with purple primed connections is the best option for a 250' run, IMHO.
Most old school plumbers I have ask say PVC, Newer plumbers seem to say PEX. I have heard that PEX can be affected by certain types of chlorine also.
