Interesting fish cleaning method

I stumbled across this video and thought I'd give this method a try on some bluegill. It worked perfectly and I wish I'd seen this years ago. Can't wait to see how it works on some shoal bass

I know it's the southern thing to batter up and fry fish but that just ruins em in my opinion. I prefer them smoked with some hickory chips and just enjoy the flavor of fresh fish instead of all that lard and batter.

Looks good! What's with the helmets in the video? did they ride out on snowmobiles and just feel the need to include them in the pics?
I have no clue about the helmets. One thing I will add is that peeling the skin of a bream works tens times easy if they're fresh, preferably still twitching a little. If you try this after they've been dead a while sitting on ice the skin has a tendency to stick to the meat. If they're fresh it peels right off.
