Oil less turkey fryer

Dropped the first bird at 9:15! Company lunch is at 1 so giving myself plenty of time

The brine I bought comes with a bag and requires 8 quarts of water. I put the bird in the bag and in the brine last night but the turkey isn’t covered. I have rotated it but wonder about submerging it

2 gallons is plenty of brine to cover a 12-16lb bird. Do fully submerge it. 5 gallon bucket works best. Just drop the bag in it and bucket shape should displace liquid to cover the bird. May have to Crack the seal and let some air out though.

I'm doing 1 tomorrow
This is my first bird with the oil less fryer. We are at 1hr and 17 min in and the bird is up to 122 degrees internal. I'll learn a lot from this one. I did not put a rub on this one, just a very light coat of vegetable oil on the outside of the bird.

Granted I'm doing this one inside our open air warehouse so no wind is hitting it to change the flames any
