I did put mine in @500 for about 12 mins. After the smoker( no wood chips)
I also had mine this morning cut up with some bok Choi from the yard and eggs from the yard.

Slow roasting is the trick. I dry brine too. Salt with kosher salt and leave uncovered in the fridge for a day. Important to set out for a few hours before cooking it

The girls had the whole damn thing set up backwards.....the cuts are clean, and smooth, however it doesn't look that way, because I was having to work backwards......it was a cluster....BUT....it's thanksgiving....I KEPT MY PIE HOLE SHUT......lets just make EVERYBODY happy....

first, the one that made the cuts you're looking at was electric.....second, don't know if you're a Randall knife fan, but the other set I use was a Randall carving set, I can assure the Randall is quite sharp, the spacer set is shown in the photo, bottom right....I do appreciate your offer, however
