Everytime I smoke a Boston bûtt, I wrap it in aluminum foil as it comes off the smoker, then into a cooler for at least 2 hrs.

kinda want to add that i like to go three rows high with mine

I'm going to give this a shot. I am using a rectangular grill, but I think I can still make it work? Depends on how much room the meat takes up.

I am smoking my first Norman brisket tomorrow on my redneck grill/smoker. Any tips/suggestions? This is the first time I have done a brisket.
