Dinzag Arms is the best, and the 308 conversion is the easiest of the Saiga conversions. Plenty of instructions online, and it should only take a few hours to 1/2 day depending on how fast you want to work.

A normal conversion even with simple hand tools should only take 2 hours max.

The parts came smooth and polished and I tested the trigger it is 2lbs 8oz! Not bad for an AK.

I'll bet you a brick of 22 that any first timer taking their time and wanting to make sure they do it right will take longer. I am impressed you can do it so fast, and maybe other's of us who have done them often can do it fast as well, but I like to give first timers reasonable expectations.

Sip your favorite drink, take your time, and make sure you get it just like you want. Sometimes slower is better, and I am sure many women would agree...
