What to do with a Mountain Cabbage?

A lady I work with gave me a cabbage last year from the NC mountains. Those things are huge and I couldn't eat it all. This year she gave me another and I tried some new things. I made kraut and mock kimchi. I think I'm going to like the kraut. Kimchi, I don't know it is a bit strong on ginger but I've gone back tripled the chili paste which helps. Pics and recipes below.

My wife picked up some smoked sausage today and I'm about to cut our first head of cabbage out of the fall garden. I'm looking forward to it, steamed sausage, cabbage, salt, and pepper.

The head I'm going to cut is huge, so I'm thinking about your kraut idea. Mmmmm.
