Been looking for a way to get wild hog to taste out of this world. After many unsuccessful attempts I hit jackpot at the firehouse Friday.
Wild hog tenderloin cut into small cutlets, make slits into cutlets.
Soak in pineapple juice for several hours.
Rub with your favorite seasonings, salt and pepper, cummin, paprika, garlic...etc.
Lay in turkey cooker with lid.
Paint on mixture of Franks hot sauce, veggy oil, balsamic vinegar, Kc masterpiece.
Slow cook at 250/275 for 3-5 hrs till very very tender, occasionally(each hour) opening lid and painting sauce mixture with brush.
