I used to keep a cruiser at Holiday Marina on Lanier. Met a fella there who fished for carp to strip the eggs for restaurants to sell as caviar.

Grass Carp recipe. clean fish as normal, lgihtly season with salt,pepper and lemon. preheat oven to 350f put the fish on a new cedar plank and bake for 35-40 min till flakes easy with a fork. remove from oven throw the fish in the trash and eat t he board.
