For something different try some Korean eggs. There is the Mayak Eggs which are pretty much the same marinade except they're soft boiled. I like the hard boiled. Really easy and very tasty.

Copycat penrose hot sausages (great for pickled eggs too!)

Just mixed up the brine and put up a quart of these to try. I’ll let y’all know in about a week if they’re any good! I used Oscar Meyer “smokies” and just cut them in half.

I save and re-use my pickle or beet juice. Just drop the eggs in and let them sit for a few days. Spicy garlic is my favorite

What sausage do you use to get the penrose sausage taste? I love those things but haven't found them in years!

2 dozen down today. I'll do another recipe tomorrow. I'll have four different ones bottled then.
It will be a few weeks before I can sit down for a taste test but when I do I advise nobody to stand down wind of me for a couple of days.
Just need a good beer recommendation for optimal output.

Who has these now, they're hard to find. The sausage too.

Not that brand but Kroger and Food City in Cartersville carry the eggs and sausages. Not as good as the Penrose but decent alternative.

Yeah I found some different ones but like you said not as good as Penrose.
