anyone eat opossum... recipes?

Never tried it, I have aeen too many greasy spots on the roads from them. They look nasty alive, bet it taste just like chicken though.
 
1 large possum, skinned, dressed, and washed
1 quart beer
4 tablespoons Tabasco sauce
1 1/2 tablespoon salt
2 onions, chopped
1 clove garlic, minced
2 tablespoons Worcestershire sauce
4 sweet potatoes
2 ribs celery, chopped
1 ounce whiskey




PREPARATION:
Mix the beer, whiskey, salt, Tabasco sauce, and Worcestershire sauce together. Place possum in a large roasting pan. Sprinkle the celery, onions, and the garlic all over the possum. Pour the liquid mixture over the possum as well. Cover and refrigerate overnight.

Preheat oven to 350F. Place the sweet potatoes around the possum. Bake covered for 1 1/2 hours. Baste once or twice with the marinade from the pan as the possum cooks.

Meat is greasy.

I have to say there is no reason to kill them unless you are hungry or just an as$hole. They are the least bothersome "pest" animal they carry hardly any diseases compared to raccoons and armadillos which for every opossum you kill takes it place. They don't dig and they don't get into trash cans unless you leave it uncovered. I get rid of the damn raccoons hoping a opossum will takes its place before another damn raccoon comes along.

When they attack my cat and eat my high dollar cat food. THEN they cause a problem. I had one almost attack me. Call me an A hole for protecting my cat. Thats cool. I can live with that. Ive shot over 15 in the past couple months. If you are hungry your welcome to them.

they usually they sit in the trees behind my house and just piss off my dog real good. last night, a big ole one was halfway to my back door mouth open, teeth shown and continually walking towards my frantic dog while making a very creepy and terrible hiss noise.

so i kinda shot him in the face... just curious if they were good eatin cause I typically try not to kill stuff unless I plan to eat... with people being the exception
