My mom always soaked in Vinegar for an hour. Im very impatient when it comes to stuffing that Okra in my gullet, so I just do 30 min and to the pot of cold salt water it goes. a vinegar soak makes a night and day difference for sure when boiling. Dont start your timer until its a rolling boil. The Okra will turn from bright green to a drab green when its getting tender. Smaller pieces will be done faster and I just fish them small ones out with tongs and set in a bowl then toss back in after drainingHave to try this. Wife hates the slime.
Exactly.I dig boiled okra as long as you got some Uncle Ben's white rice to go with it. I don't want it by itself. Now fried is different. I'll eat it like popcorn.

Actually I just look for store brand rice that says " Parboiled" on the bag. That's what makes Uncle Ben's good. If it ain't Parboiled it turns to mush.WTH?
