Booted car advice

I would buy my own boot and find the vehicle of the manager or whoever made the call to have my vehicle booted. Then I would boot their car.

I would also invest in some lock picking tools and knowledge to unlock the boot without all the physical cutting and damage. Then leave with the boot they put on my car.

spare tire in the trunk - swap and drive
You have obviously never seen a boot. I have installed one or two back in the day. They are big, heavy, clamp to the rim, and have a plate to cover the face of the tire to prevent access to the lug nuts.

The one I was aware of that was removed. The individual had a friend who owned a tow truck. The booted car was towed, jacked up, and enough suspension components were exchanged that when the legal proceedings were complete and the boot was returned. The tire, rim, and axle were still attached to the returned boot.
