Sort of a redneck Coq au Vin Blanc. Deboned chicken thighs, seasoned, browned off, with unsalted butter & diced bacon, removed, deglaze the Dutch Oven with a little red wine vinegar, chicken broth and Pinot Grigio and sweat the onion, shallots, garlic, celery, small fingerling potatoes (sliced) & carrots. Replace the browned chicken thighs, tie a bundle of thyme and 2 sprigs of rosemary and drop it on top and bake for 400 degrees (preheated oven) for 40 minutes or until the chicken registers 165 degrees F. Let stand for a bit before serving.
