Deer Ham Recipes?

Ham steak aka Round steak. I like to use deer round steak in Swiss steak. Basically it is simmered for a couple hours in tomatoes, onions and green peppers. Look on the Food Network website for a swiss steak recipe. They have lots of them.
 
^ Yeah this. I've always called them round steaks. They are good for fajitas.

Fajita marinade

1/4 cup olive oil
the juice of 2 limes
3 cloves garlic
2 tsp. Worcestershire
1 jalapeno sliced
1 tsp. cumin
2 tsp. ancho chile powder
chopped cilantro

I looked up the definition thinking the use was limited to pork, and found it wasn't an exclusive term.

Haven't tried it with venison, or with anything whole, but with sliced meats, my wife spreads sugar lightly over all surfaces and lets it set for at least an hour, usually overnight. Then she pours booze, usually rum or vodka over it and lets it set awhile longer. It really tenderizes the meat.
I wonder if you could inject a sugar/booze mixture, and coat the haunch with sugar. (Bet brown sugar would taste good.)

(Just a note: Her Korean beef recipe includes more spices; usually fresh ginger, garlic (crushed & whole cloves), onion slices, sliced apples, pears or pineapple, soy sauce and sometimes sesame seeds or sesame oil.)
