Fire Company Corn Chowder

We had this at thanksgiving and it was amazing. Had to get the recipe from my cousin in Indiana. This is a good anytime your wanting an easy side item or as a replacement for corn bread with your meal. a good read on the pic as well

FIRE COMPANY CORN CHOW
Ingredients
1 can whole kernel corn Undrained
1 can cream style yellow corn
1-8 oz. carton of Sour Cream
2- eggs beaten
1-box jiffy corn muffin mix
1- stick butter melted

Directions
Preheat oven to 350 and grease a casserole dish
Mix all ingredients and bake for 55-60 mins until brown on top

I will give it a try with some red pepper in it. tks
 
Made this last night. I added finely minced sweet onions and a little shredded cheese. Stupid me forgot to put the eggs in. It still turned our well. It was very tasty. I'll definitely be making this again. Next time I'll add more onions and try it with jalapenos or diced green chilis. I might try it with half the butter. This is not a low calorie dish with all the sour cream and butter in it.
